September's Editorial Note — Hyssop

'Behold, you delight in truth in the inward being, and you teach me wisdom in the secret heart.  Purge me with hyssop, and I shall be clean; wash me, and I shall be whiter than snow..' —  Psalm 51, verse 6-8 &10

Hyssop is a perennial herb native to Southern Europe, the Mediterranean and the Caspian Sea region. It was considered a holy plant used for religious purification in biblical times and in Egypt. During the time of the Romans it was used against the plague.

Besides being known as an effective antiseptic, helpful for healing wounds, relieving joints pain and insects bites, and as a digestive aid, it is a very popular spice in the Mediterranean cooking. In summer the plant produces bunches of fragrant pink, blue, or white flowers attracting butterflies and bees—out of which the bees produces a rich and aromatic honey.
